Not a Linux expert but ZFS runs in user space so avoid that for performance and stability reasons. XFS and ext3 are in the kernel and for our small NASes would guess that it's much of a muchness.

Basiclly,
ext3 just can support 8TB, tranditional file system in Linux. xfs can support over 16TB , and quick access on small/big file ,quick remove file. zfs is newly file system , over 16TB, support snapshot . So, for your application you can choose different file system.
