I am seeing a CPU spike every 5 minutes to almost 100%. Does anyone have any idea what process is doing this?

There are a couple of crontab tasks that run every five minutes.
Have a look at the file /app/cfg/crond.conf
Remember that the n2100's cpu doesn't have much grunt so the smallest tasks can cause it to hit 100%

Is it the Itunes server maybe? The iTunes module doesn't have a 5 minute option; Well not in the current firmware anyway...

Every 5 minutes crond launches a script which checks that the NETBIOS Name Server Daemon (nmbd, part of Samba) is still running properly.
