i have just bought an N3200 and have 3 1TB disks.

one of them i am already using and is about 65% full. i am going to use RAID5 and would like to know if there is a way i can keep all my data on that disk or if i am going to need to copy it off first?

I'm sorry, but you have to move the data to an other disk/place. The n3200 can't build raid dynamically, if you create a new raid, all data on the hdd in the raid will be destroyed.
