What does the iTunes server do? Does that basically make the NAS usable with an iTunes remote like an iPod or iPhone without the need to be running iTunes on another computer? Is this any better of an option than UPnP or SlimCenter?

With iTunes server, you can listen to your music stored on the NAS using iTunes player on PC or device such as Roku.
Slimcenter is similar to iTunes server, but you have to use a Squeeze Box.
UPnP is able to share music, photo, and movies. You have to use a DMA (digital media adapter) to enjoy your content.
